Here is the recipe for a trio of organic Belgian strawberries with organic black vanilla from Madagascar.

It is the perfect combination of three varieties of Belgian organic strawberries (Joly, Salsa, Rubis), combining sweetness, acidity and the sublime aroma that this star fruit of the summer in our country can offer us.

In order to refine the recipe and to accompany this complex and gourmet fruit, we have added the top of the range bourbon vanilla from Madagascar. This is the black vanilla, also called gourmet. A pod is on average 20 cm long and contains a lot of beans and a high vanillin content.

Used by the greatest pastry chefs, black vanilla benefits from a longer maturing period which gives it an additional richness in the development of its aromas.

On the nose: Ripe strawberry, stewed strawberry, vanilla, custard, raspberry.

In the mouth: frank attack, first mouth on a strawberry compote followed by the taste of vanilla perfectly balanced giving a fat and pastry dimension to the recipe. Finish on notes of fresh cane and red fruit, a sensation of greed and a slight acidity that absorbs your palate.
